Ingredients

  • 6 small vine-ripe tomatoes

  • 3 small cukes or 2 medium cucumbers

  • 4 sweet or hot (or both) small peppers

  • 2 limes juiced

  • 1 lemon juiced

  • 1 small onion (red, white, or both)

  • 2 tsp dried cilantro or 1/4 cup fresh cilantro

  • 1 tsp salt substitute

  • 1 tsp sea salt

  • pepper to taste

Directions

  • Dice all veggies and mix with the juices and spices in a large bowl.
  • Enjoy immediately or let the flavors blend first.
  • Keep refrigerated.
