Tips for Preparing Raw Banana Crepes and Macadamia Cream

Since the banana crepes need to dehydrate for about six hours, you may want to process them in the morning so that they will be done by dinner. This can also be done the night before. Just give yourself at least a six-hour lead time. Also, since macadamia nuts do not have enzyme inhibitors, you only need to soak them for about 30 minutes for a smoother cream. A food processor does a fine job on the macadamia cream, but a high-speed blender will take it to the next level of creaminess. Feel free to double the cream recipe and use the extra for a fruit dip. It is amazing!

Raw banana crepes with macadamia cream and fruit filling have become a family favorite in our home. Besides the dehydration time, these delicious treats are quick and easy to make.

Ingredients

  • CREPES

  • 4 bananas

  • 1 tbsp lemon juice

  • 1/8 tsp cinnamon

  • Optional: 1 tsp vanilla

  • CREAM

  • 1 cup raw macadamia nuts, soaked 30 minutes

  • 1/4 cup water

  • 2 drops liquid stevia (or 2 tbsp raw agave nectar or pure maple syrup)

  • 1 tsp vanilla

Directions

  • CREPES: Take the first 4 ingredients
  • Use a food processor or blender and process until smooth
  • Pour about 1/3 cup onto dehydrator sheets
  • Use offset spatula to flatten into 6 inch discs
  • Dry at 110°F for about 6 hours until dry yet pliable
  • CREAM: Take the last 4 ingredients
  • Soak the macadamia nuts for about 30 minutes
  • Process these ingredients until smooth (high-speed blender works best)
  • Add a tbsp of water at a time if needed to thin the cream
  • BUILD: Take the crepes and cream
  • Lay a crepe on a plate and spoon cream down the middle
  • Add strawberries, blackberries, and/or blueberries on top
  • Fold each side on top of the berries (the crepe should be sticky enough to hold together) and enjoy
