Try these delicious raw vegan fudge brownies with raw vegan cream cheese frosting! They are incredible without the frosting, but it takes this dessert to the next level!

Ingredients

  • Brownie
  • 2 ½ cups Medjool dates (pitted and soaked if not soft)

  • 1 ½ cups raw almonds (soaked 8 hours or overnight)

  • 1 ½ cups raw walnuts (soaked 4 or more hours)

  • 1/2 cup raw cacao powder

  • 1 tsp vanilla

  • 1/8 tsp cinnamon

  • 2 pinches of sea salt (we use pink Himalayan)

  • Icing (optional)
  • 1 cup almonds (soaked 8 hours or overnight)

  • 1/4 cup maple syrup, agave nectar, or date nectar

  • 3 tbsp lemon juice

  • 3 tbsp coconut oil (melted on low heat)

  • 1 tsp vanilla extract

Directions

  • Brownie
  • Rinse the almonds and walnuts well.
  • This cleans off the enzyme inhibitors and activates the enzymes so that we can digest the nuts more easily.
  • So, put all of the brownie ingredients into a food processor.
  • Blend these together until you get a thick, sticky batter that packs together well.
  • It’s okay to be bit chunky. Small bits of dates give it a fudgy texture.
  • like to line a square pan with parchment paper to make it easier to serve.
  • Pack it in tightly to get the brownie texture.
  • Icing (optional)
  • Blend all icing ingredients until very smooth.
  • So, let’s spin a web for our little spider that we’ll make later.
  • Pack the frosting in a decorator bag or zip-lock freezer bag and cut off a corner to pipe out the icing for our web design.
  • Now, take a large grape and stick 4 toothpicks all the way through to make his 8 legs.
  • Pipe on more icing for his eyes.
  • Then, put him on his web.
  • It will keep in the fridge for up to a week or in the freezer for a month.
  • Cut into squares and serve.
  • You can use leftover icing to put more on each brownie for the kids … or yourself.
